1. Label Check:

Look for “cold pressed,” “extra virgin,” and harvest date.

2. Color Test:

Pure EVOO is golden-green (not too clear, not too dark).

3. Taste Test:

Slight bitterness, fruity aroma, peppery finish means high polyphenols.

4. Fridge Test (Basic):

Pure EVOO may slightly solidify when refrigerated — but not fully freeze.
